Apple Crisp

4-5 Apples
3 Tbs Butter Chunked up
1/4 Cup of Almond Flour
1/4 Cup Coconut Flour
Couple Shakes of Cinnamon
Couple Shakes of Nutmeg
Squeeze of Honey

Cut up apples, Peeled or not peeled and add to a bowl.
Add a few sprinkles of Cinnamon, and Nutmeg and then squeeze a small amount of honey
Mix with Hands till all combined.
Then Mix Butter, Almond flour, coconut four, cinnamon, and nutmeg until its crumbly.

Put apples in a baking dish and cover with crumble.
Bake at 350 degrees for 20 minutes or until apples are soft and topping is browned.

Serve with Homemade ice cream and enjoy!!!

Paleo Shepards Pie

 
the filling:
  • 3 pounds of ground lamb (use beef if you can't get lamb)
  • 2 large carrots, grated or chopped fine
  • 1 large onion, grated or chopped fine
  • 2 tablespoons of fresh rosemary, minced
  • 2 tablespoons of fresh thyme, minced
  • 5 cloves of garlic, minced or grated
  • about 2 tsp. of Worcestershire sauce (American versions usually contain HFCS, English version doesn't. coconut aminos can be used instead too.) 
  • small can of tomato paste
  • a few glugs of red wine (don't cook with a wine that you wouldn't drink with dinner. cooking with alcohol only concentrates the flavor you are using)
  • olive oil
  • salt & pepper 

the mash:
  • 2-12 oz. bags of frozen cauliflower (i use the kind you can microwave right in the bag)
  • 2 tablespoons of melted grass fed butter (or coconut oil. it will have a coconutty flavor.)
  • 4-5 tablespoons of heavy cream (or coconut milk)
  • salt & pepper



to make the mash, microwave (or steam if you are using fresh) the cauliflower until tender. put all of the florets into the food processor as well as the salt, pepper and melted butter. turn the processor on and while everything is pureeing, add in the heavy cream. you may need more or less depending on your taste and the consistency of the cooked cauliflower. do a little quality check (QC) on seasonings, alter if needed and place in a bowl to the side.


preheat your oven to 400 degrees and preheat a pot to medium-highish heat. add the olive oil and then the lamb. season with salt and pepper. as the meat cooks, crumble it into small pieces. meanwhile, prep your veg and herbs.




once the meat is cooked through, add the vegetables and herbs, garlic last. season with salt again. ***SIDE NOTE: it may seem like i use a lot of salt  in my cooking. i was taught to season EVERY layer of your cooking. you should be tasting during each step of your cooking process, no matter what meal it is. you will end up using less salt overall.





you want the onions and carrots to get a chance to cook, so give them 6 or 7 minutes to get tender. finally add in the Worcestershire (or substitute), tomato paste and wine. reduced the heat a little bit and let the wine cook down a bit, about 3 more minutes.



 pour the meat mixture into a glass baking dish. i recommend putting it on a sheet pan first in case of any bubble overs in the oven.



next, spread the cauliflower mash over the meat mixture.


bake the pie for about 20 minutes in a 400 degree oven or until everything starts to get golden and delicious. this made about 6 servings and believe it or not, it tasted better the second day!

Paleo Pizza

Paleo Pizza



What You Need:
A Head of Cauliflower
2 Eggs
Garlic Powder
Italian Seasoning
Pizza Sauce
Your Favorite Toppings:

I Used:
Red and Green Bell Pepper
and Fresh Made Mozzarella

1. Cut Cauliflower into small chunks and put through Food Processor or Mini Chopper ( I use a mini Chopper because I do not YET own a food processor).
- Note this will create what is called Cauliflower Rice which is also used as a side dish and can be seasoned any which way.

2. Cook "riced" Cauliflower in the microwave for about four minutes.

3. Once that is steamed let the cauliflower cool and get your toppings ready.

4. Mix Cauliflower, eggs, garlic powder, Italian Seasonings in a bowl.

5. Then spread the mixture onto piece of parchment paper on a cookie sheet. You want a thin and even layer and make sure you have no holes.

6. Put into a 420 Degree Oven and cook for about 20 minutes or until the crust is golden brown.You can cook the crust more or less.

7. Pull the crust out and top with sauce and toppings.
- Make sure that your pizza sauce is not watery or else your crust will be a little soggy.

8. Cook pizza until Toppings are cooked or cheese is melted.

9. Enjoy your PERFECTLY PALEO PIZZA!!!

Tina's Famous Pancakes

I got this recipe from my favorite blogger Tina from Carrots N Cake she always has some great simple and easy recipes so this one I had to share, but all the credit goes to Tina! Thanks Tina!!!

1 egg
1 Ripe Bananna

Instructions:
-Mash the Bananna in a bowl with a fork until you get a creamy consistency.
-Add in one egg. ( You can add in more eggs or bananas to make more pancakes, just follow the 1 to 1 ratio.
-Mix and then add to a buttered or sprayed frying pan.
-Cook slow on med heat until the pancakes pulls away from the pan and edges start to form.

Then You can top your pancakes with syrup, butter, nut butter, fresh fruit, chocolate chips. You can also add fruits into the batter for blueberry pancakes. The possibilities are endless! Enjoy!!!

Chocolate Cupcakes and Chocolate “No Butter Added” Buttercream


Ingredients: For Cupcake
6 eggs
1/2 cup of coconut flour
1/2 cup coconut oil, melted
½ Cup Maple Syrup
½ Cup Dark Chocolate Melted
1 tbs vanilla extract
1 tsp sea salt
1/4 tsp baking soda

Preheat oven to 350 degrees F.
Combine coconut flour, sea salt and baking soda in a large bowl. Stir to mix.
Crack eggs into a bowl and beat until frothy.
Slowly add coconut oil to eggs to tempur (sp?) the eggs. Again beat or whip the eggs to make them frothy, then add maple Syrup and vanilla.
Pour wet ingredients into dry ingredients in large bowl. Mix the ingredients to combine and then add in the chocolate that has been melted slowly ensuring that the eggs don’t scramble.
Pour batter into well-oiled cupcake tins or tins with liners.
Bake for 20 minutes. Remove and cool completely. For the minis just cook until they are done and you can test for doneness by simply touching with your finger the cake should be firm but spring back when you release.
You can also use this recipe for large cakes as well!


 
Chocolate “No Butter Added” Buttercream
Ingredients:
1 cup dark chocolate 73%
½ cup coconut oil, melted
2 tablespoons maple syrup
1 tablespoon vanilla extract

Directions:
Melt in Microwave chocolate by slowly heating for 30 second intervals until chocolate is completely melted.

Add to the Melted coconut oil, maple syrup, and vanilla. Mix to combine and then put bowl in freezer for 5 to 10 minutes. Let cool a little on warm stove if the mixture is completely solid. If you get a solid mass you can scoop some out into a bowl and microwave for like 3 to 5 seconds. Beat with a whisk or hand mixer until its creamy and looks like buttercream. Frost cupcakes, if mixture gets too hard to spread just follow instructions to microwave.

* Store in Fridge for extra crunchy icing and for freshness.

Banana Boats on the Campfire

Banana Boats Recipe:
6 Bananas or how ever many you need
Chocolate Chips
Marshemellow
Nuts
Coconut
Foil 
Additional Toppings

1. Cute the banana length wise with the peel on.
2. Open the banana creating a crevice to put your toppings.
3 Stuff with Chocolate and marshmallow and nuts and anything you like. 
4. Wrap tight in tin foil.
5. Stick in campfire, grill or oven for 10 to 15 mins.
6. Open and enjoy ( Be Careful the foil is hot, and so is the banana)

Coconut Shrimp





Coconut Shrimp and Garlic String Beans

Ingredients:
Shrimp
Unsweetened Coconut Flakes
1 Tsp Coconut Oil
I egg beaten 
1 Cup Coconut Flour

Green Beans
Butter
Garlic

Take your shrimp and dip it in the egg mixture, then into the coconut flour and then back in the egg and into the coconut flakes.

Once you have coated them all put some coconut oil in a pan and lightly fry until golden brown.

Put finished shrimp on a plate with a paper towel to absorb any excess oil.

For the Green Beans
-Blanche them is some boiling water for a few minutes until they are slightly tender.

Melt a tbsp of butter in a pan and add the minced garlic.

Let the garlic cook slowly until its all melty and yummy looking.

Then add in your green beans to coat in the garlicy goodness.

Serve and Enjoy!
