Mary's Meat Sauce

Here's What You Need:
1LB Ground Beef
I Onion Diced
5 Cloves of Garlic
Garlic Powder
Onion Powder
I can Tomato Paste
I can of Diced Tomatoes
Olive Oil
Sea Salt
Pepper

What To Do:
- Add some olive oil to the pan and brown up your garlic.
-Brown up some ground beef in a skillet and break up into pieces. Then Add your onion to soften a little.
-Once that is cooked add in the Diced Tomatoes and then add your garlic powder and onion powder, salt, and pepper.
-Cook for a few hours for the flavors to develop.

* You can also add Sausage and pepperoni in the mix if you want to amp up the protien and flavor.


Zucchini Pasta W/ Meat Sauce and Sauteed Spinach

What You Need:
Zucchini
Meat Sauce
Spinach
Garlic
Butter
Olive Oil
Sea Salt 

Here's What To Do:
- Thinly Slice the Zucchini and put it in a large skillet with some olive oil and cook until it browns a little.
- Defrost your Meat Sauce and add to a sauce pan to warm.
- Once the Zucchini is done put it a bowl and add some garlic to the pan and lightly brown. Then add the spinach and cook until the spinach is wilted just before you serve it add a small amount of butter and some Sea Salt.
-Then plate all the Zucchini and Meat Sauce, and put the Sauteed Spinach on top.

* Serve with some grated cheese on top if your Indulging!!!

Mahi-Mahi w/ Mango Chutney

What You Need:
1lb Mahi-Mahi
Salt and Pepper
Lemon Juice
1 Tsp Butter
1 Red Bell Pepper
1/2 Red Onion
2 Limes
1 Tsp Olive Oil

Here's what you do:
-Season the fish with Salt and Pepper and Lemon Juice and let the fish marinate.
- Finely Chop the Red Bell Pepper, and Onion, Add to a sauce pot and cook until tender with olive oil.
- Once the peppers and onions are soft add in the chopped Mango.
-Let the Mango's cook until they are soft and add the juice of two limes.
-Once the mango's are soft lower the Temp to Low and simmer until its time to serve.

For the Fish:
-Melt butter in a Med/High frying pan.
-Put the Mahi-Mahi in the pan skin side down first and let it cook for 4-5 minutes.
-Then flip and cook for another 4-5 minutes until the fish is no longer opaque.

Dress the fish with the Chutney and serve with your favorite vegetable.

Gronk Smash Beef Stew

Gronk Smash Beef Stew!

What you need:
2lbs lean cubed Stew Beef
1/2 Cup Beef Broth
1 Red Bell Peppe
1Green Bell Pepper
1/2 Cup Mushrooms Sliced 
1/2 and onion
3 TBS of Montreal Steak Seasoning
2 Peices of Bacon Cubed
Splash of Red Wine
1 Small Can Tomato Paste
Salt and Pepper To taste

What to Do:

-Cut up your bacon and start to cook in a deep pot.
-Cut up your peppers into chunks and set aside.
-Season the beef cubes and then brown on Med/High heat with Bacon in leftover bacon fat.
-Once the beef is seasoned add in your peppers, mushrooms and onions.
-Then stir in your beef broth and wine to just about cover the beef.
-Mix in your tomato paste and let it come to a rolling boil with no lid. Once the stew boils for like 10 or 15 minutes, then reduce to low and let it simmer for about an hour or two. Stirring occasionally of course and Voila. Gronk Smash Beef Stew!

Bomb Pumpkin Pancakes

1/2 Cup Canned Pumpkin ( no sugar added)
1 Ripe Bannana Mashed
1 TBSP Coconut Four
4 eggs
1 TBSP Vanilla
1 TBSP Cinnamon
1 TBSP Pumpkin Pie Spice
1 TBSP Nutmeg

1. Combine all the ingrediants in a bowl until batter is smooth. You can put mixture through food processor, or mix with a hand mixer to get the lumps out.

2. Make sure bandanna is thoroughly combined.

3. Then Melt Butter or Coconut oil in a skillet on medium heat and spoon out mixture in small amounts. Wait until the edges are cooked and then flip.

Serve with warm Maple Syrup, Softened Butter, or Apple Butter.


Sweet Potato Hash Browns

1 Large Sweet Potato
1Tsp Olive Oil
Sprinkle of Salt

1. Cut the Sweet Potato into little cubes with a very sharp Knife.
2. Coat the Sweet Potato Cubes with Olive Oil and spread on a sheet pan in one even layer.
3. Sprinkle with Salt liberally.
4. Bake at 450 until golden and crispy.

* Its ok if they get a little Burnt... They will still taste yummy... Just don't burn the whole tray.

Serve with Paleo Pancakes or Eggs!

Paleo Chocolate Chip Cookies

Serves: 24
Ingredients
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Pure Vanilla Extract
  • 1 1/2 cup Semisweet Chocolate Chips
  • 1/2 cup Coconut Oil, Organic, unrefined
  • 1/2 cup Maple Syrup, Grade B
  • 2 whole Eggs, Pastured
  • 3 cup Blanched Almond Flour

    Instructions

    1. Preheat oven to 375°F.
    2. In a medium-sized mixing bowl combine dry ingredients.
    3. In a small mixing bowl beat eggs, maple syrup, and vanilla extract with a hand mixer.
    4. Pour wet ingredients into dry and beat with hand mixer until combined.
    5. Melt coconut oil, pour into batter, and continue to blend until combined.
    6. Stir in chocolate chips.
    7. On a parchment-lined baking sheet, drop balls of cookie dough, about a tablespoon in size.
    8. Bake for 15 minutes.
    9. Let cool and serve with coconut milk.
    Make these in big batches beacause they will go quick... Even my non Paleo friends loved them!
